Mexican
food is one of the more diverse cuisines in the world. As with its
people, its flavors come from a complex combination of origins,
where the Mayan influences fused with the Aztec and were then
overlaid with Spanish. Xitomatl (tomatoes) and xocoatl (chocolate)
have their roots in this rich country, as does Cesar Salad (created
in Tijuana).
